Green Salad Pitas

Green Salad PitasThis is a great recipe for lunch with a bowl of soup.

It is better to wrap the pita pockets separately, and fill them with salad just before serving.

1 cup peeled and diced cucumber
1 cup diced red bell pepper
1 cup diced zucchini
¼ cup crumbled feta cheese
¼ cup diced red onion
¼ cup chopped black olives
2 Tbs. extra virgin oil
1 Tbs. fresh lemon juice
1 Tbs. red wine vinegar
1 Tbs. diced oregano
Salt and freshly ground black pepper

3 – Six inch whole wheat Pita or wheat Chapati
6 Curly leaf lettuce leaves
Directions:
Step 1: Mix cucumber, bell paper, zucchini, feta cheese, onion, olive, oil, lemon juice, vinegar and oregano in a bowl and add salt and pepper.

Step 2: Line each pita half with a lettuce leaf; and fill with ½ cup salad mix.
